The origins of Epoisses (ay-PWAHSS) can be found at the Abbaye de Citeaux where monks first produced this remarkable and complicated cheese. The cheese has a powerful rich flavor with a pungent smell, with a fine textured and mouth-watering taste of sweet, salty and creamy milk flavors. In order to develop the characteristic dark orange rind, Epoisses is washed with brine for several weeks, then finished with wine or brandy. This washing deepens the flavors of the cheese and guarantees a spoonable, silky paste
