Shropshire Blue is a cow’s milk blue cheese from the United Kingdom and is technically a cross between Stilton and Cheshire. The orange color comes from the addition of annatto, a natural food coloring used in cheddars. Shropshire Blue is slightly more tangy and creamier than a Stilton but still has a similar flavor profile.  It makes an attractive statement on a cheeseboard - a real show stopper.  Pair Shropshire Blue, like most blues, with sweeter and/or more full-bodied wines such as Banyuls, LBV Port, California Cabernet Sauvignon.
