Livarot (lee-vah-ROH) hales from the Normandy region of France. This washed-rind, cow’s milk cheese’s distinctive features are its strong aromatic pungency and the bright orange strips of raffia threads which bind it; the five wrapping strips (and maybe also because of its pungency), lend Livarot an alias of “the Colonel.” It is a washed-rind, soft cheese that can be challenging, but mouth watering and delicious. Its paste is semi-soft, creamy and smooth in texture, with small holes. When ripe it can be quite runny at room temperature. Enjoy Livarot with frutier and/or spicier white wines such as Alsatian Gewurztraminer, Alsatian Rielsling and Tokay Pinot Gris.
