Pont L’Eveque (pon lay-VECK) is one of the renowned triumvirate of glorious cheeses from the Pays D’Auge in Normandy. Camembert and Livarot are its confreres. It has a smooth, washed or brushed golden rind, a tender, supple consistency and a fat content of 50 percent. Its smell, when fully ripened after about 6 to 8 weeks, is distinctly savory. Pont L'Eveque has a warm, buttery flavor with fruity understones and a slightly tangy finish. Pair Pont L'Eveque with fruity, light to medium-bodied red and white wines such as Chenin Blanc and Beaujolais.
