Campo de Montalban is a semi-firm to firm Spanish cheese with a blend of cow, sheep and goat's milk harvested in La Mancha. Prior to 1985, it was considered a Manchego cheese because of its similar texture and appearance, but Campo de Montalban has its own unique flavor. Aged three months, Campo de Montalban is rich and buttery and finishes with a perfect balance in your mouth. Try it with a slice of membrillo and marcona almonds. Compo de Montalban pairs especially well with Tempranillo blends and California Cabernet Sauvignon.
