Order salame in any rustic cafe between Milan and the Italian Alps and, chances are, this is what you'll savor.  Crespone is a traditional country salame from the Brianza region in Northern Italy, which is home to more salumificci (delicatessans) than anywhere else in Italy. The coarse ground paste of selected and well-trimmed fresh pork is seasoned with pepper, garlic and wine. But that's just the beginning, imported from Europe, a natural casing gives our Crespone all its subtle flavor. Perfect alongside country bread and a no-nonsense wine or as a table-top cutting to go with salad, pasta, risotto or even baked potatoes.
