Pecorino Toscano

For as long as the Italians have been raising sheep, they have been producing delicious Pecorino cheeses.  Pecorino Toscano is produced in the Tuscany region and makes an excellent table or grating cheese.  It’s paste ranges from white to pale yellow, and the edges are rubbed in olive oil.  Because it is produced in the spring, Pecorino Toscano was traditionally known as “March cheese” or Cacio Marzolino.
