Roaring Forties Blue
is a full flavored blue with a sweet, nutty flavor and a rich, creamy texture that is a hit with even those who aren't always a fan of the blue-veined variety! Made at King Island Dairy, south of Melbourne on Australia's King Island, cows feed on rich, unique grasses. Local legend says the grass seeds washed ashore in straw mattresses from the numerous eighteenth century French and English shipwrecks caused by infamous Roaring Forties gales which frequently, and often unexpectedly, bring westerly winds of over 100 km per hour to the island which lies at 40 degrees longitude. Today the cows graze on this lush grass, along with the occasional bites of kelp that wash ashore after storms, year round; there is not a need for any artificial feed supplements or stock growth additives that other dairy farmers rely on. Roaring Forties Blue is rindless, and aged in a black wax coating to promote it's sweet, nutty flavor and the smooth, creamy texture we love- this cheese never lasts long at Tastings!
