Carpenedo Blu '61
is a soft Italian blue cheese named for the year cheesemaker Antonio Carpenedo became engaged to his wife Giuseppina. It is washed in Roboso Passito IGT, a late-harvest sweet wine, and covered in bright red cranberries. During the aging process it is flipped several times by the cheesemaker and has more wine applied, allowing the wine and cranberries to color the rind and infuse the cheese with a fruity flavor.
Milk: Pasteurized Cow Rennet: Animal Age: 2-3 months
Look: Ivory paste with blue veins and deep, purple-red staining on the exterior from the cranberries it is topped with.
Feel: Creamy, soft
Smell: Fruity, rich, strong, sweet
Taste: Notes of raisins, currants, vanilla, and licorice, which offsets the bold blue bite
Pairs well with: A sweet Italian Passito or your favorite dessert wine
Tastes good with: Make it a star of your after-dinner dessert tray and serve with a compote of balsamic vinegar and fruit, as suggested by the Carpenedo's themselves!
