One of our favorite cheeses from Onetik in Spain is its Chebris. A beautiful blend of goat and sheep's milk from the Basque Region of Spain. While the rich sheep's milk provides the unctuous mouthfeel giving that first taste a pleasing smooth ride, the goat's milk then surprises your palate with a gentle tang providing a bright note at the end. After one taste you'll agree it's a winner!

Look: Natural rind with off-white paste, small eyes throughout cheese
Smell: sweet and grassy
Taste: rich nutty then a slight tang
Pairs well with: Traditionally paired with Rioja or Tempranillo blends
